Pad thai



Day 2 lunch for the guys, one of my favorite dishes! Dressing recipe modified from Everyday Raw by Matthew Kenney. Makes 6-8 large servings.

Dressing:
1 T. sesame seeds (optional)
1c. sesame oil
1t. dried red pepper flakes
6 sun dried tomatoes (soaked for 2 hours if dried)
2 roma tomatoes, chopped
1/2c. apple cider vinegar
1 T. salt
1T. ginger juice
1/2c. cashews (soaked for 2-4 hours if possible)
1c. nama shoyu
1/2c. lime juice
8 bird chiles (substitute jalepeƱos or thai chiles, quantity depends on your spice tolerance)
2T. maple syrup

Blend all ingredients in high-speed blender till smooth

Veggies: 
1 red cabbage
1 red onion
6 carrots
4 bell peppers (red and yellow)
1 large bunch cilantro
1/4 c. cashews (optional)
2 packages kelp noodles (cut each bunch into thirds)

Julienne all veggies till they're all about the same size~3inches or so. Mix in a really big bowl. Top with cilantro, green onions and cashews to garnish.
