No bean hummus and mediterranean wraps


Hummus:
2 cups zucchini (~1 zucchini)
1/2c. tahini
1/4c. lemon juice
3T. olive oil
1-2 garlic cloves
Salt, pepper and cayenne to taste

Wrap:
7 collard green leaves- stemmed and halved along the spine (length-wise)
Veggies: bell peppers, red onions, cucumber, carrots, avocado
Favorite tampenade

Spread hummus along 3/4 of collard leaf, add veggies and tampenade, wrap and roll!
Makes about 14 wraps
