Breakfast Bars


Although not raw, this is definitely one of my new breakfast favorites!

2 Ripe Bananas-mashed
1 1/2 Cups Unsweetened Shredded Coconut
1/2 Cup Flax Meal (ground flax)
1/4 Cup Pumpkin Seeds
1/4 Cup Sunflower Seeds
1/4 Cup Nut Butter (I used almond)
1/2 tsp. Vanilla
3T. maple syrup or honey
1/2 Cup Dried Cranberries, Raisins, Chopped Dates, or other dried fruits. Frozen blueberries are also really good.

Mix all ingredients together
Form by hand and place on oiled baking sheet or muffin tins. Coconut oil works well for this.
Bake at 350 F for about 14-16 minutes, 18-20 minutes if the cookies contain maple syrup, or until they begin to brown on the bottom and sides.
