Coconut balls
2 c. Brazil nuts 3.5 c. Shredded coconut, unsweetened 3 c. Dates, pitted (may be adjusted to your liking, more for denser consistency) 1/4 c. Coconut oil, softened 2 t. Vanilla extract 1/4 t. Salt Process Brazil nuts in food processor until finely ground. Add all ingredients except the dates. Process and add dates in slowly (just not all at one time). Roll mixture into balls of desired size.
